Ok, I have had this same problem. I will tell you one of my favorite QUICK meals. The only thing you have to plan ahead is, to have chicken breast thawed. 1st thing you do, is 30 minutes before you want to eat, rince in water and then roll the boneless chicken breast in italian bread crumbs that you have added a little salt and pepper too. Put the chicken breast in the oven for approx 30 minutes at 325.(depending how big they are)Have you tried Pasta Secrets" yet? They are WONDERFUL, and QUICK. They have the pasta, fresh vegatables, and seasoning all ready in the package. (My 6 year old even loves the broccoli) You find it in the freezer section. It take 7 minutes to microwave, and the pasta is soft, and the veiggies are not mushy. Try the garlic one first. My husband thought I cut up all the veggies my self, and loved the whole side dish! Add some fresh sliced tomatoes, and heated french bread, and your meal is complete. The side dishes, take such little time to prepare, that you have time to go back to the computer while the chicken is cooking! Good Luck!

I have to say that IQF chicken breasts are a life saver at any time. I like to throw one in a couple cups of water and some bullion and let it boil for about 15 minutes, or until the chicken is done. Remove the chicken. Then add some minced dried onion, parsley, garlic, and half a bag of frozen mixed veggies. (Any kind) Bring to a boil again until veggies are cooked. Chop the chicken and add again. Add about 2 c quick rice and allow to cook about 3-4 minutes. (Nearly all liquid should be absorbed.) If you have extra liquid, or just want to, thicken it with a little flour and cold water. My kids love this, even my son who is in the running for the pickiest person in the world! It takes about 20-25 min. start to finish. Also, Boil water, throw in pasta of some kind. Cook. Heat sauce in microwave. Dump together! |
