Ideas For Cooking a Whole Chicken

I was inspired by the post here on oamc. I tried it a few months ago, and although I was exhausted after, I had a month of food or more afterwards, AND I hardly had to do anything. I had a LOT more time with my family, and I wasn't always worry about WHAT I was having for dinner.

Anyways, along those lines, does anyone have any ideas of things I can do with one whole chicken? Like sandwiches with leftovers of a roasted chicken or something along those lines? thanks!

I have one of those Ronco rotisseries, so we do a LOT of whole chickens on there. Afterwards, I pick the chicken clean & mix the leftovers in with black beans & salsa and use it to top steamed white rice. I then top each serving with some cheddar cheese.

I posted this in the recipe contest & I think there are also a couple of other easy chicken recipes that could use left over chicken in them posted in the same thread.

Kat how do you like your Ronco rotisserie I was watching an infomercial early about them. I am thinking about getting one. I have a George Foreman grill and I love it. But am not sure if I would use the rotisserie.

Here's what I do with a whole chicken: before I leave for work in the morning, I put it in my slow cooker along with carrots, celery, onions and whatever else you want. Let it cook all day and when you come home dinner is done and the chicken is really moist and falling off the bone.

Deb, I LOVE my rotisserie! Before I got this, I would just laugh at the infomercial, but I use it all summer long because it doesn't heat up the house & I don't have to wait around for the grill to get ready either.

Mine also came with a basket so I can do burgers on it as well as chicken parts, veggies. And, the spits are great for sausages & brats as well as ribs. The only thing I really don't use is the tray on the top - it's just too little for me (I need to feed 4 hungry people, so we eat a whole lot more veggies than would fit in the tray) but it is good if you want to steam the buns for the sausages & brats. I've also slapped one of those cheap hams on it, brushed it with a pineapple glaze & it came out wonderfully.

If you're really interested in getting one, check out Amazon & see if they have any of the refurbished units left. That's where I got mine & there was not a single thing wrong with it - looked just like new!

I had never heard of this before but my brother made it on the grill. It is the best tasting chicken I have ever had! I got this recipe off of [Only registered and activated users can see links. Either login above or Register Now] it is called Beer Butt Chcken. I hope you enjoy it as much as I did.

Ingredients



1 cup butter
2 tablespoons garlic salt
2 tablespoons paprika
salt and pepper to taste
1 (12 fluid ounce) can beer
1 (4 pound) whole chicken


Directions
1 Preheat an outdoor grill for low heat, and lightly oil grate.
2 In a small skillet, melt 1/2 cup butter. Mix in 1 tablespoon garlic salt, 1 tablespoon paprika, salt and pepper.
3 Discard 1/2 the beer, leaving the remainder in the can. Add remaining butter, garlic salt, paprika and desired amount of salt and pepper to beer can. Place can on a disposable baking sheet. Set chicken on can, inserting can into the cavity of the chicken. Baste chicken with the melted, seasoned butter.
4 Place baking sheet with beer and chicken on the prepared grill. Cook over low heat for about 3 hours, or until chicken is no longer pink and juices run clear.

Here is a quick good recipe for leftover chicken:


Take the meat and put it in the bottom of a 8x 8 roasting pan. Then mix a can of Cream of Chicken soup and Cream of Mushroom soup with a can of milk. Add this over top of the chicken. While you are doing all that cook a box of cornbread or chicken stuffing. Add the stuffing on the very top and bake for 1/2 hour! Quick and easy to make and delicious to eat!

Heres my momma recipe.
I havent tried it myself but have eaten it on many many occasions.
It is an Asian recipe and it involves chickens

Making the rice:
Cook rice with ginger (cut into quarter-sized pieces) like you would cooking normal rice. Add a little oil in there if you wish with the water-rice-mesh

Making the sauce:
squid sauce (half a cup)
garlic (ground it slightly
red peppers
ginger (use food processor and grind it slightly)
sugar (a spoonful or two)
mortar and pestle all of the ingredients simultaneously to a mesh
then add squid sauce

cook chicken in boiling water til it is cooked (use this to cook the rice in place of water; tastes better)
then once it cooked just tear parts of chicken to chunky pieces.
serve with rice and ginger sauce

voila ! enjoy!

I do the same, only I use sour cream instead of the milk..the recipe's on the back of the Stove Top stuffing box now....it's my favorite dish, I could eat my own weight in that stuff, and that's a LOT lol

I put a chicken on one of those vertical roasters so the fat drips off the chicken into the pan. That works pretty well.

My kids like to eat a chicken spread made with leftover chicken and mayo. I put it in my little food processor so it's a snap to make. They put it on crackers. You could jazz it up, but if I put anything else in it...they won't eat it! lol

My son loves the chicken stuffing recipe.

Also, we make chicken enchiladas...
