Fruit Pizza 1 20 ounce roll of Pillsbury Sugar Cookie Dough 1 8 ounce package of cream cheese (regular or low fat) 1 4 ounce container of Cool Whip (8 ounce and use only half; lite or regular) Suggested fruit: Blueberries, Strawberries, Bananas, Peaches, Pineapple chunks, Kiwi (remember to soak the bananas in a small amount of lemon juice to keep from turning brown) Glaze: ¼ cup of water 1 tablespoon of cornstarch ½ cup of sugar ½ cup of orange juice 2 tablespoons of lemon juice Soften cookies dough, place on a 14 inch pizza pan and press together to form a crust. (use some flour on your finger tips to keep dough from sticking to them). Bake as directed until golden brown, cool. GLAZE: Mix water and cornstarch in a saucepan, add sugar, orange juice and lemon juice, Bring to a boil. Boil one minute and let cool thoroughly. Mix cream cheese and cool whip, spread on cookie dough. Slice strawberries in half and place on outer edge of pizza, remember to place fruit close together, then one row of bananas overlapped. Next a row of sliced kiwi overlapped. One row of sliced peaches followed by pineapple chunks in the center. Scatter blueberries over the entire pizza. Spoon glaze over the fruit. Store covered in refrigerator until ready to serve. Use any preferred fruit, even canned or frozen fruit will work, just be sure to thaw and/or drain well. ****I used 1 pint of strawberries about 2 ½ bananas about 3 kiwi a small can of sliced peaches a small can of chunk pineapples about 2 handfuls of blueberries |

Peanut Butter Cookies Dick the Bruiser told this recipe on a late night radio show my Granny heard many years ago. He said he always made these after a match. 1 cup peanut butter 1 egg 1 cup sugar Mix together and spoon on greased cookie sheets. Smash cookies down with a fork. Cook at 325 degrees until they no longer look shiny. Cool and eat... |
