| HELP... NEED REALLY GOOD NON-MEAT RECIPE.
my sil is coming for dinner and she doesn't eat meat. she does eat fish but i'm not in the mood. does anyone have a really tasty recipe for an entree &/or side that i can make? i'd really appreciate it. i had gotten some mid-east takeout with huumus, babaganoush and some lentil dish with caramelized onions the last time as side dishes and she loved it but it was expensive to buy ready made. if you know any of these recipes, they'd be greatly appreciated also. even veg lasagna.(don't forget recipe for sauce. thanks again for any help ANYTHING WOULD BE GREATLY APPRECIATED. |

How about eggplant parm or a lazagna? You could also do a stir fry with the veggies you have with a little olive oil, soy sauce & pepper, served over rice. LOL Lori...'tis alright babe..it just added more "credit" to the recipes Did you see the one for Eggplant con Queso? Oh yummmmmy sounding!!!! Also the Eggplant Tomato Bake..I'm a tomato addict tho!! LOL!Eggplant con Queso 1 eggplant, peeled and diced 1 cup shredded Cheddar cheese 1 cup diced toasted bread 1/2 cup heavy cream 1 tablespoon all-purpose flour 1 teaspoon poultry seasoning Directions 1 Preheat oven to 300 degrees F (150 degrees C). 2 Boil and drain eggplant. Mix in 1/2 cup of cheese and bread. Spoon into small casserole dish. 3 In a small bowl combine cream, flour and poultry seasoning. Pour over eggplant mixture and sprinkle the top with the remaining 1/2 cup cheese. 4 Bake in preheated oven for 30 minutes. |

Babaganoush Ingredients: 1 large eggplant 2 cloves garlic 1 tsp. lemon juice 1 tablespoon chopped parsley lemon wedges Directions: Bake eggplant at 350 degrees fahrenheit for one hour. Let cool, peel and drain off excess liquid, squeezing gently. Blend with garlic until fairly smooth, add lemon juice and parsley. Mix well. Serve with raw dipping vegetables such as celery, carrots, and cauliflower, and peppers. |

Kama, I have no recipes, cause I never measure anything! just dump stuff together! But Tortillla stacks are easy tortillas, beans, cheese and keep stacking then bake. sprinkle with more cheese and serve with guacamole, sour cream and hot sauce. Like I said Never use recipes LOLOL....the kids love these things though. |
