I think this is what you're looking for...

Basic Vanilla Pudding

3/4 cup sugar
2 Tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
2 slightly beaten egg yolks OR 1 well beaten egg
2 Tablespoons butter or margarine
1 teaspoon vanilla

In saucepan, blend sugar, cornstarch, and salt; add milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir two minutes more. Remove from heat.

Stir in small amount of hot mixture into yolks (or beaten egg); return to hot mixture; cook and stir two minutes more. Remove from heat; blend in butter and vanilla. Pour into serving dishes; chill. Makes 4 or 5 servings.

For Chocolate Pudding :
Follow directions for Vanilla Pudding, increasing sugar to 1 cup. Add two 1-ounce squares of unsweetened chocolate along with the milk.

For Butterscotch Pudding :
Follow directions for Vanilla Pudding, substituting brown sugar for the granulated sugar. Increase the amount of butter to 3 Tablespoons.

Big grin My Great Grandma's Egg Custard/Pudding

Bigma's Egg Custard

3 eggs
1 can evaporated milk
1 c. Sugar
1 1/ tsp. Vanilla
Butter (about 1/4 cup, melted)
Pinch of salt
Nutmeg or Cinnamon for garnish

In a saucepan over med. heat add eggs, milk, sugar, butter, salt and vanilla. Cook stiring constantly, until it starts to boil really well and thickens. ** Note if it doesn't thicken you can add a little corn starch that has been disolved in water. Once thicken to desired consistancey, pour into dessert bowls and garnish with nutmeg or cinnamon. Let cool in refridgerator. Enjoy.

For use in an Egg Custard Pie, DON'T COOK IT ON THE STOVE! Pour egg mixture into a deep dish 9 in. pie shell that has bee pre-cooked at 300 degrees for 5 min. rheat oven to 425. Then place back into oven at for about 35 to 40 minutes or until the pie is "set".

Cooking it on the stove will give you a rich creamy "pudding" cookngt as a pie gives you a custard.
