Big grin Looking for zuchinni recipes/preparation ideas

I saw Mouse's coffee can idea in the crock pot. Going to try that. I would also like dessert recipes other than the bread and other ways to fix it. Any ideas would be great as I have a supply and need to use it soon. I know I can freeze some, but that will come later. Thanks!

Although in the cobbler recipe, they forgot to put how much flour is in the crust but the other 2 seem ok.

My in-laws always give us those HUGE zucchini (LOL the ones that have been left in the garden too long)...

I slice them, bread them (egg & bread crumbs, or keto crumbs for the low-carbers) and fry in olive oil...eat as is OR roll or layer them with some ricotta cheese, veggies and ham, cover with some tomato sauce & mozzerella... bake it for zucchini rollatini! (tastes similar to lasagna). You can also coat the zucchini pieces in mayo or butter, then dip in crumbs & bake them for a similar result!

I have also diced zucchini with some onions, saute in a bit of butter or oil, then add some salsa or taco seasoning (follow package directions) and make zucchini tacos "meat"!
