any good left-iver recipies??

Does anyone have a good left over recipie?? I love to cook but sometimes I have a hard time with left overs. with left over chicken, I make "flautas" (its chicken rolled up in corn tortillas and deep fried). also, you can freeze them after you cook them and use them for a later dinner. Also, I make soup from left over chicken-but, that sometimes gets old-I make it often.

Iam looking for recipies that are not too casserole-ish. Sometimes I am a picky eater....hope that I am not making it too difficult for you.

I'm always looking for good ideas for leftovers, too. Next time I have chicken left over I'm going to try a BBQ chicken pizza...
