I cut the peppers into strips and freeze them all the time! I usually find them in the reduced produce, cut off the bad parts, and freeze the rest!

I have an abundance of green peppers from my garden and freeze them. (I've never frozen them whole though). I cut them into strips, lay them on cookie sheets to freeze, then put them in zip lock baggies, this way they don't stick together in a big clump.

Yes, you can freeze stuffed peppers. I just made a batch yesterday and froze them (along with stuffed cabbage, another garden surplus My boyfriend had 2 cooked for dinner tonight and said they were very good. Before I stuffed them though, I blanched them in boiling water turned down to a simmer...that way when you pull them out of the freezer most of the cooking is already done, plus you don't end up with peppers that are too crunchy.I also used a box of Zatarain's Red Beans & Rice mix with my other chopped veggies and with some other herbs from the garden. They came out quite tasty, if I do say so myself One more hint (if you're still with me when you freeze them, put a paper towel or two in the container; helps absorb any moisture that forms when it freezes. Also works when you freeze any veggies or herbs. Good luck and happy eating!!!
