I need a Great FRIED RICE recipe!!!!! ~HELP~ ;)

I have been looking for a really good
ham fried or chicken fried rice recipe.

I would really like to know what kind of seasonings to add to the rice to give it some good flavor....the kind I really liked was at a chinese restaurant and it had chopped green onions and chunks of chicken or ham in there.......it was so yummy and now they retired and I cannot find a recipe I like!!!!!!!!!
If anyone has any I would really appreciate your help.

Some I found on the web...
Fried rice recipe


Measurements are per person


3/4 c cooked rice, cold is best

2 oz pork, ham, chicken or shrimp, cooked and cut up fine

1 tbsp soy sauce

1 scallion with top, cut into 1/4 inch lengths

1 egg, scrambled and cut up

1 tbsp oil


**Optional: can or oriental vegetables or bean sprouts (drained and rinsed well). OR 1 pkg American vegetables, precooked 3 minutes. Vegetables would be added at the same time as meat and scallions.


Heat oil to meidum hot. Add soy sauce. Stir in rice. Cook rice so it is fluffy when done. Toss till heated through and lightly coated with sauce and oil. Stiri n meat and scallions and toss to heat through. Stir in eggs, toss to mix, and serve immediately.

Basic Oriental Fried Rice

6 c Rice, cooked, cold
2 lg Eggs; beaten with dash of salt
1/2 ts Salt
2 tb Soy sauce, Dark
1 ts Wine, cooking
2 Green onion stalks, chopped fine
1 c Peas; frozen thawed
4 tb Peanut oil


Into a hot wok, add 1 tablespoon of peanut oil. When oil is hot, gently pour egg into wok and cook with medium-high heat for 2 minutes and then turn over to cook the other side of the egg. Cook for another 2 minutes and remove from wok to a cutting board. Shred egg into slivers.

Use medium heat, add 3 tablespoons of peanut oil into wok until smoke begins to rise. Put in cooked rice, salt, wine, and dark soy sauce. Keep stirring until the rice is hot. Add peas, egg slivers, and green onions. Stir for another minute and serve hot.


I have a friend who makes the worlds best fried rice....her secret is she boils the rice in beef broth for beef fried rice, chicken broth for chicken fried rice, etc... rather then cooking it in water
I also think using fresh veggies makes a difference too

This is REALLY good

My mother-in-law gave me this recipe and it's really, really good. It came from an old Chinese cookbook. When my MIL makes it she has to triple the recipe.

1 TSPN Salt
1 TSPN Sugar
1/2 TSPN Accent
3 Eggs-beaten
3 TABLESPOONS soy sauce
3 Cups cold cooked rice
1/2 TSPN Pepper
6 TABLESPOONS Oil
3 Medium size green onions--chopped coarsely
1 pound shrimp/chicken/ham
1 Can mushrooms--chopped

Heat skillet with oil, bring up the heat and add shrimp and cook till done. Remove shrimp. To pan add salt, pepper,onions and mushrooms. Then add shrimp and mix thoroughly and stir frequently. Add rice, soysauce, sugar and accent(I mix the soy,sugar and accent before adding). Cook over medium heat for 5 minutes and stir constantly. Add eggs and stir till set.

When mil makes this she uses shrimp, ham and chicken all together. Also, I find it works better when you cook the eggs by themselves, chop and then add to rest of mixture. She also adds a handful of green peas--adds color and taste.

I think this is the best I've ever eaten--have never gotten any at a restaurant as good.
