**OATMEAL CAKE** Moist and Delicious!

OATMEAL CAKE

Ingredients

1 cup quick oats
1 1/4 cup boiling water
1/2 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 1/3 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla


Pour boiling water over oats, let stand.
cream butter and sugar add eggs, then add dry ingredients, add oatmeal and vanilla.
pour into a 9x13pan and bake at 350degrees for 30-40 minutes



ICING
6 tablespoons melted butter
1 1/2 cup brown sugar
3/4 cup evaporated milk
1 1/2 cup flaked coconut
1/2 cup chopped pecans or walnuts
1 teaspoon vanilla

to make icing mix together the melted butter, brown sugar, evaporated milk, coconut nuts and vanilla
when the cake is done pour this mixture immediately over the hot cake and put cake under the broiler, broil the top of cake for about 5-10 minutes watching closely so it doesnt burn.


VERY SCRUMPTIOUS!!!!!!! '

another thing is if you are making oatmeal for breakfast you can just make extra and make the cake with that instead of making the above amount of oatmeal.......
My grandma always was making this cake when she would have leftover oatmeal in the mornings!!!!!
ITS REALLY REALLY GOOD!!!
Tastes great even without the icing!
