I haven't tried this yet, but the person I got it from said it was easy and yummy I was doing a little paper sorting and found this, I will be trying it this weekend hopefully! Mmmmmm!!!**YOU NEED A CLEAN (that's a given huh? lol) 2 POUND COFFEE CAN!!!** 2 Eggs 2/3 C. Veg. Oil 1 1/4 C. Sugar (granulated) 1 1/3 C. Grated Zucchini 2 Tsp. Vanilla 2 C. Flour 1/4 Tsp. Salt 1/2 Tsp. Baking Powder 1 Tsp. Cinnamon (I like a touch more in the oven baked bread) 1/2 Tsp. Nutmeg 1/2-1 C. Chopped Nuts (Optional) In a med. size bowl, w/ mixer, beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla. Mix well. In seperate bowl combine all of the DRY ingredients (including chopped nuts). Gradually add dry mixture to the zuchinni mixture. Mix well. Pour into greased and floured 2 pound coffee can. Place in crock pot. Cover can with 8 paper towels. Cover w/ crock lid and bake on high 3-4 hours. DO NOT CHECK OR REMOVE cover until last hour of baking. Let stand 5 minutes before removing bread from coffee can.

Thanks, Paula!!!!!! ![]() I will have to try this, as I have zucchini coming out my....well...you know.....LOL! ![]() I will have to buy a 2 lb can of coffee to get a can, though. I have 1 pound cans, and 3 pound cans, but no 2 pound ones.....wouldn't that figure? LOL!!

Ok...I planned on having it made already, but DH and I visited some friends last night and didn't get home until 5 this morning...YIPES is right. I freaked when he woke me up..ummmm..late this AFTERNOON!!! Yes folks, I slept until 3:30..now I was PO'd. I jumped up, started maiking the dough for pizza tonight, thru a load of wash in, tired connecting- our ISP was having a power outage so all servers were down, and I just now got the Zucchini out of the freezer..I didn't plant any this year so I have to use my "back-up" supply from last year. As soon as it is thawed I'll be trying it, bad thing, it won't be done until after 11..ugh. I guess you'll all be the first told since everyone else will be tucked in bed when it's done..LOL!

I DID IT ![]() Okay..I used the smaller, but taller crockpot that I have, my larger one was much too squatty for the coffee can. I used a 2lb. 2.5oz. can. I also couldn't fit 8 paper towels on top, so I used 4 and I tucked it around the can once inside the crock. I used Pam (non-stick spray) instead of greasing and flouring. I left it on high for about 4 hours and 15 minutes. Once the loaf looks like it's pulled from the sides than I knew it was done. Becareful when taking the can out, sucker is hot! LOL! I then put the whole can on a cooling rack, waited about 10-15 minutes and "dumped" my very round loaf of bread out! LOL! I always mist a couple of paper towels w/ water then cover my cooling loaf so the outside crust stays moist. Smells good, looks a little odd, but all in all...I think it's something I'll do more often. I like the fact you don't have to keep checking it. I had to "adjust" the recipe because my frozen zucchini had quite a bit of liquid and I didn't want to drain it in fear the zucch. would lose some of it's flavor. I also used 2 1/2 tsp. of cinnamon I can't wait to try a piece. I don't think any of ya will have a bit of trouble that tries this. Enjoy

mbclark, I would say you could w/ no problem. I mean it would be the same as breaking down any other recipe I would assume. Heeeey, I like the idea of trying it w/ other recipes, especially cakes. I'm trying to think now what object I could make out of this shape of cake (even cut in 1/2 long ways) for one of the boys' birthdays..hmmmm..maybe make an Easter Bunny laying down..ummm..nothing else coming quickly to mind..lol!
