Question

when i bake bread, the recipe usually requires me to add cooking oil to the recipe.... that is soooooo many calories and fattening...
i thought i heard once that you could substitute equal amounts of apple sauce in recipes....is this true??????

In certain recipes, it is possible to use applesauce as an alternative to oil. But, you also have to remember that applesauce adds more "weight" to the batter - so if it's something like a fluffy roll that you're trying to make, then you don't want to do this. Darker breads like whole wheat & rye turned out acceptable with applesauce, but when I'm baking regular breads, I don't substitute for the butter or other oils called for as the results have been less than perfect (and I have a bread addicted hubby, so messing with a good recipe is usually greeted with a frown )

I've had very good results using applesauce in my homemade goodies - banana bread, pumpkin bread & muffins come to mind. I also use it in my waffles & pancakes (and I also add a little bran, cinnamon & nutmeg as well). If you'd like, I can post some recipes that use applesauce in the place of oil. I've also heard that using it in baking mixes for cakes is usually fine - I just haven't ever tried it as I make mine from scratch.

yesh, that's what i meant, like using applesauce to sub for oil in like betty crocker or pilsbury bread/cake/muffin mixes

this is okay??

I really like the applesauce idea. I also wanted to mention that you can use a banana instead of an egg in recipes. I have done this many times when making cookies or cakes. It makes mixing a little harder, but it works and it tastes good too!

I also have used the applesauce very successfully in cake mixes,but found in brownies(we like the fudgy/chewy kind)it did not give the same texture.It is great in friendship(Amish)bread.I would tell you to try it,go for it! I also don't tell I've made the substition until people taste it first-this way I get an honest opinion.

Re: substitutes for cooking oil in recipe???

Hi,

I am very new on cooking and baking. Last night was my first time tried to do make an apple bread with the below recipes, I made muffins instead. This morning, I tried them, it is not cake-like at all, in fact, it tasts like jello, chewy, but it does not tast like cakes or bread at all. I do not know what I did wrong here. I did some changes that some of viewers suggested whom tried the same recipes and I also added 1/4 cup of orange jucie which recipes does not call for.

I saw other similar recipe call for unsalted butter, but this one doesn't. I wonder what I did wrong that the reuslt comes out does not takes like cake or bread at all.

The original recipes:

3 C AP Flour
2 teaspoon cinnamon
1/2 tsp baking power (reduced to 1 1/2 tsp)
1/2 tsp salt
1/2 cup vegetable oil ( sub with 1 cup unsweaten apple sauce)
2 c sugar (reduced to 1 cup of sugar, 3/4 brown, blance white)
2 eggs, beaten
1/2 tsp vanilla
