My DH has been making his own beef jerky for about 5yrs now with a dehydrating machine and I swear it is better than
any store bought beef jerky I have ever eaten.....
Although the spices and cure is sometimes hard to find so when we do see it at wal-mart we stock up

I just use yoshidas teriaki sauce and spices I experiment with....

OOOHHHH Scooter let me tell ya my hubby trys to experiment
alot and sometimes it comes out good but then others its like eating a firecracker when he trys using Cayenne Pepper (bad spelling I think ) LOL
Oh and another bad thing he does is leave me in charge of the dehydrating time heheheheh last time it was like shoe leather OOOOOHHHHH !!!! I think I should leave him to the whole thing next time

Hey sweetcindy... here's the recipie... will email you also...

Brine....

lots of teriyaki sauce (sufficient to cover all beef)
johnny's seasoning
garlic powder
lemon pepper

Beef....

Boneless roast cut into chunks or strips (fat cut off)


Marinade 12 hours in brine, place on racks in smoker (I use a little chief). Use hickory wood chips, changing them every 45 minutes until done... some people swear you only have to change 3 times, I keep it up for the whole cycle. Smoke jerky for 12 hours... Remove from racks and enjoy...

If you like it strong, use this recipie... If it's too much teriyaki, rinse the beef off in cool water after marinading...

you can also place the jerky in a dehydrator... You'll have good results also...

while I'm smoking a batch, I have another marinading... I'm addicted!!!

HAHAHAHAHAH LOL HMSRAM... My friend always makes deer jerky every year, and he's from the south so he uses every pepper and tobasco crap known to man... I can barely eat something with taco bell mild sauce on it...

Hey cindy... if you can get on a military post, I urge you to go to the commissary for the roasts... I went to the civilian grocery store tonight and was shocked that thier roasts were 3 times the $$$$.... I went to the competitor and they were too... The roasts I buy are pretty big and cost about 4 bucks....

Well scooter, I just found our common ground (other than DOD)..I can't tolerate the spicey sauces either..DH loves the hot salsa at Chi-Chis and I'll tell you what, the mild one sends me thru the roof. A-1 sauce and mustard even seems too spicey for me. I can handle the EXTRA MILD salsa's but that's about as far as I go. I have tried making my own, but it usually goes to waste because everyone else prefers the hot stuff.
I personally don't care for jerky, but I'm copying down your recipe because everyone else in the house loves it. May have to try it w/ some of the ample supply of deer meat we have as well...it's too expensive to have done. Thanks oodles!

another food dehydrator jerky maker here.i also am not into hot spices so i make everything mild.i always finish the drying with a heating in the oven for an hour to lower the risks of making myself sick.i love homemade jerky but do not care for store bought.

I make mine in a dehydrater. I am always up for a new recipe. My DH & Kids will eat a whole batch in one day lol.

I like using the liquid smoke, whistershire sauce(spelled ugh!) pepper & diced fresh garlic (makes it spicey).

Hey that sounds like one of my DH recipes he never used the garlic yet I will tell him to try that in it

hey Mouse and Scooter, deer jerkey is the best! Anyone tried to make summer sausage out of it? My husband has expirimented until he found the perfect recipe. I am still trying different things to make jerkey out of ground deer without having to use the processed mix. Isn't that why we get our deer?

Hey Rselenius... I love deer jerky... always tastes better on a 4 point or above!!! LOL... I dont mess with makin sausage... leave that to the pros.... By the way dont make the jerky out of ground deer, just fillet the meat once you skin the deer... same as beef basically...
