Peppermint Roll

Does anyone have a reciepe for this? It's like a pumpkin roll, I think. My "ex" use to make it. I haven't seen her in 15 years. But, during the holidays, she would make this "roll". It was a choclate cake type thing, had a cream, and tasted like peppermint. With the choclate cake, the filling, and the crushed "candy canes" that she put in the filling, it was SSSOOOO good!!!!!!! Now I want to know how to make it. It was a roll. That thin cake, add filling, and roll it up. Now...before you start giving instructions...I must tell you about me. I'm a rednecked, beer drinking, pot bellied, no cookin' SOB. So if ya send me the "res pee" please make it like ya was talkin' to a 1st grader. TIA

I remember that this was best when it came out of the fridge. Again TIA.

She alway made sure it was kept in the fridge. So it must have to be kept cold.

I found this recipe that sounds similar to what you're looking for:

Of course, I haven't tried it, but just looking over the recipe (and having made pumpkin rolls before - yum!), if you try this, at the end of the recipe it says that after the rolled up cake cools, to unroll it and then spread the peppermint filling. It doesn't actually say to carefully re-roll it after you spread the filling on, but that is what you have to do to make it a 'roll'. Then drizzle on the chocolate glaze, if desired.

I know the recipe may look daunting to you, but reading it over, it actually looks very easy. Maybe your DW can attempt it? I don't know, but it seems like the crushed peppermint candies would feel like tiny shards of glass when you eat it, but it must not if you have such fond memories of it. And, yes, you'd want to keep it in the fridge ... because of the cream filling.

Thank you SO much YorkieLover!! I think that's it. If not, it's so close. I'm not a cooking/baking person. I can cook enough to feed myself, but that's it. I've never tried to "bake" anything. But I loved this so much, I'm thinking of trying to make it myself. Thanks for the help.
