Whole chickens??

I bought one of those Purdue whole roaster chickens from the store the other day. It was $.89 per pound as opposed to $3.99 for chicken breasts! Anyways I know how to cook it (I am just going to cut off the skin and sprinkle with herbs) but I am wondering two things.

(1) How do you cut them? I've never known what to do AFTER they are done cooking! I usually just end up breaking off a hunk of meat, bone and all! Is that fine to do or is there a better way to use all the meat?

(2) Is there some sort of REALLY simple soup I could make with the bones...I want to get EVERY last bit of chicken off that thing! I don't have a big crockpot but I do have a pretty big pot...I'm not talking about making gallons of soup, just using the leftover parts of the chicken to make a few servings of soup.

If you search for chicken, the first result will be tips and will include links about making stock and other recipes. Not sure if it will explain how to cut, but you could look under turkey for that to get some ideas. The trick with separating the legs and wings from the torso is to cut at the joint.(rather than sawing on the bone ) If the chicken is well cooked like in a crock pot the meat will fall off the bone.

I am in the same boat, I got one for dh last grocery trip at .49 cents a lb!

I usually do a whole chicken in the crock pot. It will fall off of the bones and then do whatever with the meat. As far as soup goes, if there isn't any meat on the bones, I don't think you would get any good soup out of them.

dh ended up slow cooking it in the oven w/ lime juice, salt, pepper and seasonings. It made a couple meals...dinner the first night, leftovers, last night's dinner-corn tortilla bake w/ corn, rotel, chicken, corn tortillas. Tastes better w/ cheese but I am no-dairy!
