Questions about freezing certain foods

Hi all. I have a question about freezing certain foods. My 3 yo ds will be going into the hospital within a month or so for major surgery and I would like to prepare some things and freeze them ahead of time. Here are some things I would like to freeze:
Scrambled eggs (real eggs, cooked then frozen)
French toast (real french toast-bread, egg and milk)
apple slices?
lunch meat sandwhiches with cheese (no condiment on it, just bread, meat, cheese)
What do you all think? Are all these items ok to freeze? I wasn't really sure about egg items as I use real eggs.
Thanks again, you all are very helpful!
Katie

Re: Questions about freezing certain foods

Oh, I sure hope your little DS is going to be ok.

I have frozen all of those items (with the exception of apple slices) with very good results. Pancakes and waffles also freeze well. I would think that you could freeze the apples...maybe a little lemon juice rubbed on them to keep them from browning? If not, peaches and grapes freeze really well.

We used to freeze sub sandwiches (same deal without condiments) all the time when we would buy them from the fundraisers.

Again, I hope that all goes well with the surgery. Are you going to have to spend a lot of time (weeks)at the hospital, or is it a quicker one?

Wouldn't it take almost as long to thaw and heat scrambled eggs or sandwiches as it would to make them fresh? Those are two things I make for dinner when I don't have time (or inclination) to cook.

Don't freeze eggs. It becomes really gummy after you've thawed and heated them up. Just make them fresh since it takes that long anyway to thaw and then cook them again.
