| Ground beef recipies Dh is most likely going to lose his job pretty soon and I am a stay at home mom. We are going to start cutting back everywhere we can and that includes our grocery shopping. I can get ground beef for about $1 per pound but I just don't have a lot of good recipies for it. Other than spaghetti and chili, does anyone have any good ground beef recipies that they would like to share? Thanks a bunch!!

| Here's One: This may not sound all that thrilling, but my husband likes this: Cheeseburger Log....it is ground beef, cheese (your fave kind, I use American, and the shredded taco blend), onions, green peppers, mustard, salt, pepper......and whatever else you want to toss in for variety's sake I brown the onions and beef together, the drain the fat, then add all the rest.It is then placed on rolled out dough (I use Bisquick...2 cups and enough milk to make it hold together)....roll it up (kind of jelly roll style), bake at 350 degrees for about 35-45 minutes (it depends on how thick the dough is, especially in the center of the roll). Like I said, not all that fancy, but he likes it I use hamburger meat a lot too, since I often find it on sale cheap. Chili and spaghetti do get old, I know from experience ![]() Did you check out allrecipes.com? You can type in ground beef and see alll the recipes they have with it. They are rated too, so you can get an idea if others found them to be okay. | My kids love this easy meal. Make meatballs using a pound of ground beef, an egg, some bread or cracker crumbs, milk, salt and pepper. I first mix this up with a baggie on my hand to make clean up a snap. Then I use a melon baller to form the meatballs and drop them in a pan. Mix a can or two of mushroom soup with about half as much milk and pour over the meatballs. Bake for about a half hour on 350 and serve over egg noodles. We also make tator tot hot dish, chowmein hot dish, pizza hot dish,etc. I save money by making meatless meals, too. ![]() __________________ Check out these [Only registered and activated users can see links. | Stuffed Shells Large pasta shells, cooked and drained(enough to feed your family) 1 pound hamburger 1 small onion chopped 1 teaspoon salt uncooked minute rice 1 jar or can of pasta sauce shredded mozzerella cheese In bowl, mix hamburger, onion, salt and rice. Stuff each shell full of hamburger mixture. Place a thin layer of pasta sauce in bottom of casserole dish. Place each stuffed shell open side down, in the casserole dish. Pour remaining sauce over the shells. Cover and bake at 350 until meat mixture is done, about 30-45 minutes. Remove from oven and sprinkle with shredded cheese. Let melt and serve! These can be put together ahead of time, refrigerated, then baked. ************************************************* Groundbeef Cheesesteak Sandwiches -About 1 1/2 pounds ground beef -1 onion, chopped -1 can of mushrooms, drained -A few slices of Velveeta cheese (more if you like it cheesy, do to taste) or a can of condensed cheddar cheese soup -Seasoned salt to taste Brown beef, add onion and mushrooms, cook until tender. Sprinkle on seasoned salt. Lay slices of Velveeta on top and let melt. Mix all together and serve on submarine sandwich or hoagie buns Variations- can also add sliced green pepper, and I've also used Swiss cheese instead of the Velveeta. *************************************************** POOR MAN'S BEEF STROGANOFF 1 lb ground beef 2 large onions, sliced or chopped 1 clove garlic, minced or garlic powder is fine 1/2 pint mushrooms, sliced 1 can cream of chicken soup salt and pepper 1/2 pint sour cream Saute onions, garlic and mushrooms. Add hamburger and brown. Add soup and a little water (maybe 1/4 can). Cover and cook for 5 minutes. Remove lid. Add sour cream and heat Gently. DO NOT Boil. Serve immediately over rice, noodles or potatoes. **************************************************** Shepard's Pie This is my version of Shepherds Pie and my family loves it. slice and boil 3-4 medium potatoes. In a large frying pan cook a small chopped onion until translucent, then add a lb of ground beef. Cook until beef is crumbled and brown. Add a package of Knorr's Hunter Sauce or Onion Gravy mix along with 1-1/4 cups of water. Stir and simmer for 5-10 minutes until gravy and meat have thickened. Pour ground beef mixture into a deep dish pie plate. Drain one or two cans of your favorite vegetable (we like corn or peas) and layer on top of ground beef. Drain and mash the potatoes with butter and milk and then spread on top of the vegetables sealing around the edges. Pre-heat oven 350. Cook 1 hour. Patty ground beef into hamburgers. Dice potatoes (I leave the skin and use little red potatoes). Slice about 1/4 cup of onions. Place tin foil in dish and allow additional to wrap it up. Spread potatoes and onions over patties, wrap up and let it cook in own juices. It is really easy, cheap and tasty. I have also thrown a few carrots over the mix. Hope you enjoy. If you like this recipie I have several others for ground beef. I too live on a strict budget. |

A head of cabbage (especially if you have a fruit/vegetable or farmers market), is inexpensive. I've stuffed cabbage, peppers, squash and tomatoes - if it's stuffable, I've stuffed it! ![]() How about soup? My Mom used to make what she called "campfire" stew, and she'd make a big pot at a time. She'd use for her base a couple or more cans of vegetable soup, and then add other veggies in there, while browning the hamburger. Once the burger was browned, she just added it, let it cook awhile to get the flavors all in and the other veggies cooked. You can add potatoes to it or rice or any kind of soup noodles you like. Pretty much whatever's on hand. The other thing that we have a lot and it is at least as cheap in price as burger is chicken and you can do lots of stuff with that, if you like it. Or, a turkey breast? That way you'd have leftovers for other dishes and/or sandwiches. Hang in there, it'll get better and in the meantime, you'll have learned a ton of recipes you love! Kat ![]()

Still, with so many yummy burger recipes here, I couldn't resist sharing this one, since I had never before thought of using ramen noodles as "pasta," even though, of course, they are.... This is cheap, easy, quick, yummy, and different, and it reheats well! (What more can ya ask?!?)Beefy Italian Ramen Skillet 2 pkgs. beef-flavor ramen noodle soup mix 1 lb. ground beef 24 slices pepperoni 1 can (14.5 oz.) diced tomatoes with Italian seasoning 1 cup water 1 sm. green bell pepper, cut in 1/2-in. pieces (1/2 c.) -- I omit this ![]() 1 c. shredded mozzarella (4 oz.) Break blocks of noodles in half (reserve one seasoning packet, and discard the other); set aside. In 10-in. skillet, brown beef and pepperoni; drain. Stir tomatoes, water, and seasoning packet into beef mixture. Heat to boiling. Stir in noodles and bell pepper. Cook 3-5 min., stirring occasionally, till noodles are tender. (I've found it takes just a bit longer.) Sprinkle cheese on noodle mixture in ring around edge of skillet. Cover and let stand about 5 min. or till cheese is melted.
