| The Holidays are coming soon- Just Fall weather food, company food, fun food. MMMMmmmmMmmmmmm I thought it would be so fun if we all submit a recipe (or more!) of our favorite holiday food. Sometimes I think I cook the same things over and over, it would be fun to bake some tried and true recipes. Now I am a simple gal, so don't laugh at my recipe-hehe Apple Crisp (ohh yeah baby) 5 cups of peeled sliced apples bunch of cinnamon some sugar 1/2 cup of oats 1/3 cup of butter (more or less) 1/4 cup of flour 1/2 cup of brown sugar then some more brown sugar You really should use real butter (has anyone heard of the studies out now saying real is better than margarine?wahhhooo!) Ok, dump the apples into a small baking dish (or double recipe for regular pan) I sprinkle tons of cinnamon on top, a little white sugar, and a little brown sugar. In a seperate bowl put all the rest of the ingrediants. I also dump a ton of cinnamon into that bowl. Mix with a knife- you don't want it to turn into a paste, rather be crumbly. | I made apple crisp this afternoon - mmm! I don't care for oats in it so mine was just a basic butter/brown sugar/flour/cinnamon topping... and yes butter is better as it doesn't have the trans fatty acids in it (I'm sure blueaguave could explain it better than I - or just look up Dr. Atkins' website on the net, he explains it in detail). Anyhow...maybe we should talk to the mayor to have our own cooking forum on here...anyone have any political clout? <grin> We are in the process of buying our next home and we'll probably be moving in right around Thanksgiving, so I am trying to keep it simple this year...when I figure out what I'm making I'll post it here! | great for Halloween or Thanksgiving!! Pumpkin Rolls Beat 3 eggs on high speed for 5 minutes. Gradually add 1 cup sugar. Mix in 2/3 cup pumpkin (canned, cooked, whatever) and 1 teaspoon lemon juice. Beat well. Stir in by hand 3/4 cup flour 1 teaspoon baking powder 2 teaspoons cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg 1/2 teaspoon salt. Put on greased and floured jelly roll pan and Bake at 375 for 15 minutes. Cool 5 minutes. Turn out onto a clean dishtowel and roll up, towel and all. Filling 1 cup powdered sugar 6 oz cream cheese, softened 4 tablespoons butter 1 teaspoon vanilla Mix until fluffy. Spread on cooled cake then roll it up again.
