Re: What Is Your Favorite Comfort Food?

Anything Italian is comfort to me. Although my background is Norwegian, somehow I'm hooked on pasta!

It's so simple. I actually felt silly for not having learned to do it sooner lol
I did however put my own twist on the recipe since I don't like to measure and follow directions lol
I just get some boneless skinless chicken breast and slice it into thin strips (this is cheaper then buying it already sliced)
I then Marinate it in italian dressing for a few hours (this is my twist lol)
After that I dip the chicken in flavored bread crumbs and bake them.
I usually cook them at 350 for about 15 to 20 minutes, they don't take long since they are thin.
while they are baking heat in a saucepan
1/2 cup Frank's Red Hot Sauce
1/3 cup butter
(I usually make so much chicken that I actually have to multiply that times 4)
Remove the chicken from the oven and when the sauce is all blended nice pour it right over the chicken in the baking pan....or you can dip each piece if you want...it's up to you.
They are ready to eat right away....serve with Bleu cheese dressing and some celery sticks. That's all there is to it..... takes 30 minutes tops.

Enjoy!

Re: What Is Your Favorite Comfort Food?

This topic makes me hungry! Good to see people welcoming comfort food...I really think that the best diet is one which includes everything you want to eat, just in moderation and in connection with lots of healthy stuff too!

As for my comfort foods, would probably have to go with ice cream and homemade mac & cheese :)

Re: What Is Your Favorite Comfort Food?

I hate food, but then again, I am on heavy narcotics everyday, so I alternate between being nauseous or having no appetite. Recently, other then when I force myself to eat something, because I know it is an absolute necessity, the only things that have appealed to me are tuna salad sandwiches, (and the bread has to be toasted) and peanut butter cups or Reese's Eggs or Sticks.

I love really cheesy, creamy mac and cheese! I just came across a Paula Deen version which includes sour cream (!) that I plan to make soon.
