An easy lunch that is not expense you could try is simple Pinmento Cheese
Use Velvetta Cheese shredding it add mayo and pimentos spread over wheat toast. My kids love it

make as much or little as you like.

for dinner one night a week
take all the left overs in the frig and dice it up, veggies and meats,
1 to 2 potatoes diced you can leave the skin on for extra vitiamns, dice 1/2 to whole medium onion and 3 eggs
in frying pan saute potatoes and onions, after cooked completely add leftovers then eggs salt and pepper to taste and cook until eggs are done.
I call this SURPRISE because when you recongized what is on your fork and the new favor it has you will be surprised. Good luck to you.
