Hi!

The Veggie Lasagna is actually supposed to have ricotta in it, but Mark (hubby) doesn't like ricotta (an inexpensive substitute for ricotta, which he also doesn't like is cottage cheese). I use mozzarella. He likes that... lol, but you can use just about any that your family likes.
