Hi Kirsten,

How about soups? You can make a huge pot up or two, and especially if you like veggies (there are so many you can put in a soup), then have it for dinner the day you make it and freeze the rest in containers.
I have off-the-top of my head recipes for some if you'd like. I've been cooking for so long I don't measure exactly, lol.
