Whole chickens??

I bought one of those Purdue whole roaster chickens from the store the other day. It was $.89 per pound as opposed to $3.99 for chicken breasts! Anyways I know how to cook it (I am just going to cut off the skin and sprinkle with herbs) but I am wondering two things.

(1) How do you cut them? I've never known what to do AFTER they are done cooking! I usually just end up breaking off a hunk of meat, bone and all! Is that fine to do or is there a better way to use all the meat?

(2) Is there some sort of REALLY simple soup I could make with the bones...I want to get EVERY last bit of chicken off that thing! I don't have a big crockpot but I do have a pretty big pot...I'm not talking about making gallons of soup, just using the leftover parts of the chicken to make a few servings of soup.
