Stuffed Shells
Large pasta shells, cooked and drained(enough to feed your
family)
1 pound hamburger
1 small onion chopped
1 teaspoon salt
uncooked minute rice
1 jar or can of pasta sauce
shredded mozzerella cheese
In bowl, mix hamburger, onion, salt and rice. Stuff each shell full of hamburger mixture. Place a thin layer of pasta sauce in bottom of casserole dish. Place each stuffed shell open side down, in the casserole dish. Pour remaining sauce over the shells. Cover and bake at 350 until meat mixture is done, about 30-45 minutes. Remove from oven and sprinkle with shredded cheese. Let melt and serve! These can be put together ahead of time, refrigerated, then baked.

Groundbeef Cheesesteak Sandwiches
-About 1 1/2 pounds ground beef
-1 onion, chopped
-1 can of mushrooms, drained
-A few slices of Velveeta cheese (more if you like it cheesy, do to taste) or a can of condensed cheddar cheese soup
-Seasoned salt to taste
Brown beef, add onion and mushrooms, cook until tender. Sprinkle on seasoned
salt. Lay slices of Velveeta on top and let melt. Mix all together and serve on
submarine sandwich or hoagie buns
Variations- can also add sliced green pepper, and I've also used Swiss cheese
instead of the Velveeta.

POOR MAN'S BEEF STROGANOFF
1 lb ground beef
2 large onions, sliced or chopped
1 clove garlic, minced or garlic powder is fine
1/2 pint mushrooms, sliced
1 can cream of chicken soup
salt and pepper
1/2 pint sour cream
Saute onions, garlic and mushrooms. Add hamburger and brown. Add soup and a little water (maybe 1/4 can). Cover and cook for 5 minutes. Remove lid. Add sour cream and heat Gently. DO NOT Boil. Serve immediately over rice, noodles or potatoes.

Shepard's Pie
This is my version of Shepherds Pie and my family loves it.
slice and boil 3-4 medium potatoes.
In a large frying pan cook a small chopped onion until translucent, then add a lb of ground beef. Cook until beef is crumbled and brown. Add a package of Knorr's Hunter Sauce or Onion Gravy mix along with 1-1/4 cups of water. Stir and simmer for 5-10 minutes until gravy and meat have thickened.
Pour ground beef mixture into a deep dish pie plate. Drain one or two cans of your favorite vegetable (we like corn or peas) and layer on top of ground beef.
Drain and mash the potatoes with butter and milk and then spread on top of the vegetables sealing around the edges.
Sprinkle top with sweet paprika and then put under broiler until potatoes brown slightly.
