This may not sound all that thrilling, but my husband likes this:
Cheeseburger Log....it is ground beef, cheese (your fave kind, I use American, and the shredded taco blend), onions, green peppers, mustard, salt, pepper......and whatever else you want to toss in for variety's sake

I brown the onions and beef together, the drain the fat, then add all the rest.
It is then placed on rolled out dough (I use Bisquick...2 cups and enough milk to make it hold together)....roll it up (kind of jelly roll style), bake at 350 degrees for about 35-45 minutes (it depends on how thick the dough is, especially in the center of the roll).
Like I said, not all that fancy, but he likes it
I use hamburger meat a lot too, since I often find it on sale cheap. Chili and spaghetti do get old, I know from experience
Did you check out allrecipes.com? You can type in ground beef and see alll the recipes they have with it. They are rated too, so you can get an idea if others found them to be okay.
PS: Sorry to hear about the potential job loss......hopefully it will work out that he keeps it, or finds a job even better
