great for Halloween or Thanksgiving!!
Pumpkin Rolls
Beat 3 eggs on high speed for 5 minutes. Gradually add 1 cup sugar. Mix in 2/3 cup pumpkin (canned, cooked, whatever) and 1 teaspoon lemon juice. Beat well.
Stir in by hand
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt.
Put on greased and floured jelly roll pan and Bake at 375 for 15 minutes. Cool 5 minutes. Turn out onto a clean dishtowel and roll up, towel and all.
Filling
1 cup powdered sugar
6 oz cream cheese, softened
4 tablespoons butter
1 teaspoon vanilla
Mix until fluffy. Spread on cooled cake then roll it up again. Refrigerate and serve cold with whipped topping!
