I have one of those Ronco rotisseries, so we do a LOT of whole chickens on there. Afterwards, I pick the chicken clean & mix the leftovers in with black beans & salsa and use it to top steamed white rice. I then top each serving with some cheddar cheese.

I posted this in the recipe contest & I think there are also a couple of other easy chicken recipes that could use left over chicken in them posted in the same thread.
